Easy & Delicious Tuna Poke Bowl

Writer's picture: Ellen EstesEllen Estes

Tuna Poke bowls sound so fancy, don't they? I love ordering them at restaurants, but the list of ingredients on the menu makes it seem like it would hard to make. Well guess what? They're not! They're easy to make and delicious. Every.Single.Time.

The first time you make Tuna Poke Bowls, you'll likely have to buy several unique ingredients but you don't use a lot of those ingredients so you'll have them when you get ready to make this recipe the second time (which will likely be just a day or 2 later because they're THAT good). Plus, once you have those ingredients on hand you'll likely use them for other recipes. It's worth the little investment on the front end. Trust me!

There are a few key ingredients that make a big difference. First of all: jasmine white rice. Sure, you can use regular instant rice for this recipe, but the jasmine rice is SO much better. And, once you have some on hand, you can use them for various types of stir fry bowls which are also even better with jasmine rice. The second key ingredient is fresh tuna. Don't buy frozen. I know fresh is a little more expensive, but you'll only need 1 piece of tuna for about 3 bowls. Again, trust me on this one! I buy the tuna from our local seafood shop. It's so fresh and yummy! I usually only make it to our local seafood shop on the weekends which is why this meal isn't usually in our weekly meal plan. It's a special weekend treat.

Tuna Poke Bowls

Ingredients:

1 Piece of Fresh Tuna

Sesame Oil

Salt & Pepper

Sesame Seeds

Jasmine Rice

Green Onions

Avocado

Cucumber

Soy Sauce

Spicy Mayo (This is the kind we use and we use it for stir fry bowls too, but you could also mix siracha and mayo if you don't want to buy this.)

Directions:

  1. Make jasmine rice according to the instructions on package.

  2. While the rice is cooking, add approx 1 Tbs of sesame oil in a pan and let it get hot.

  3. Season both sides of the tuna with salt, pepper, and sesame seeds.

  4. Once the oil is hot, add the tuna to the pan. Cook for 3-4 minutes on each side, depending on how raw you want your tuna.

  5. Dice green onion, cucumber, and avocado.

  6. In a bowl, put a layer jasmine rice. On top of that, in small sections, add a spoonful of tuna, green onion, avocado, cucumber.

  7. Top the bowl with soy sauce, spicy mayo, & sesame seeds.

There you have it! Deliciousness. And the best part is that it is so easy! Make this ASAP. You won't regret it!
